Nectar is a honey dense in texture and rich in taste with a strong aroma that is more delicate than other honeys. Its mahogany-like color highlights the rich mineral content and indicates the high amount of antioxidants, important ingredients of many foods proven that help protect against cellular damage. Because it's a honey pure and unprocessed, Nectar may crystallize but not easily. Crystallization is triggered naturally by pollen and other trace elements in honey, and it is the indicator of real, pure and unprocessed honey.

Pangaeon, the gold bearing mountain of ancient Macedonians, is a mountain rich in history and mythology. It is a vast and imposing throne within the mountains of Falakro, overlooking the basin of Menikio, imparting a sense of greatness, charm and mystery. Its peaks, with the highest one at 1956 meters above the sea level, invoke a sense of wonder when viewed in person. The flora of the mountain includes rare wildflowers, conifer tree forests, vast areas containing bushes and low alpine vegetation, as well as hundreds of therapeutic herbs. The presence of ample water in this mountain area, combined with the characteristics of the regional flora, produce a honey unique in flavor, aroma and density.

We only work with independent artisan beekeepers, with 40 years of experience in beekeeping activities and honey trade. Using traditional and sustainable techniques without the use of heat or filters, ensure the natural beneficial properties of our exceptional tasting honeys remain in every container. Their motivation is sourcing from the devotion and love for the bees with the aim to deliver superior quality honey products satisfying even the most demanding honey lovers.

Greece has more beehives per acre than any other country in Europe,  and this is largely due to the rich variety of flora of over 850 different species, and unlimited sun. The biodiversity of the countryside means that there are multiple types of honey, each with its own particular characteristics and flavor. It is well-known that the composition of honey depends greatly on where the bees collect their raw materials from. These are the two key sources: bees can collect nectar from flowers, and/or they collect the sweet secretions of aphids and other insects feeding on plant sap from trees, called honeydew. The majority of Greek honeys produced come from both sources, with approximately 60% coming from honeydew that the bees collect from conifer trees (such as Pine, Fir, Oak and more), and the rest 40% from flower nectar. Recent studies revealed that dark-color honeys produced by bees feeding on honeydew have greater antioxidant properties than those produced by bees feeding only on nectar. This fact differentiates Greek honey from others, and classifies it as one of the finest honey in the world! 

Honey in Canada is graded based on its color, moisture and filtration. The Canadian Food Inspection Agency (CFIA) grades honey on the end product alone and does not account for processing practices. According to the regulations set in place for filtration, the CFIA states that Canadian Grade No.1 honey needs to flow through an 80 grid mesh filter. During inspection a finished product will be taken and mixed with warm water to form a liquid, and the liquid will be poured through an 80 grid mesh screen. If there are no particles left on the mesh, the honey is graded Canada No.1. However, the only way for any honey (including raw/pure honey) to flow through this mesh screen and leave no particles behind, is to be heated and pre-filtered during processing.
Pasteli Bar’s honey collection refuses to heat at any stage of processing and therefore our honey does not and cannot meet Canada's "Grade No.1" filtration standards. We would argue, that any Canada No.1 honey on the shelf should not be claiming that they are raw or pure when they have all heated their product in order to meet the filtering standards. We believe and it is a fact, that when honey is heated it degrades from its “Raw” or “Pure” status. 
At Pasteli Bar we have worked very hard to provide our consumers with an exceptional, actually pure honey and we believe that we deserve credit for it, and not considered to be a “lower” grading honey. So, until “Raw” becomes a recognized CFIA grade, Pasteli Bar’s honey collection will continue to offer one of the world’s best "Grade No.3" honey- 100% pure, unheated and unfiltered product on the shelf!
